Spring is in the air and I’m absolutely loving all of the seasonal fresh fruit and veggies. Last weekend I got a huge container of strawberries for just $4.99 at Trader Joe’s and I couldn’t be more excited (it’s the small things that count 😉 ). One thing I always have on hand is fresh fruit around the house to snack on since I have an irresistible sweet tooth — bring on the berries. I also make sure to stock up the freezer with lots of frozen fruit options for various smoothie or shake recipes.

Benefits of Blueberries & Chia Seeds

Some of the super-foods I’ve been loving lately include blueberries and chia seeds. Blueberries are not only jam-packed with crazy health benefits like antioxidants and Vitamin C, but they are also known for reducing stomach fat and preserving vision — perfect for my #PinterestAbs Challenge and because I’m literally blind as a bat! Not so fun fact: I’ve been wearing glasses and contacts since I was 10 years old. If you have good vision, eat more blueberries because you won’t understand what a luxury it is until it’s gone.

My friend Kate from SoCal Runner Gal recently hooked me up with some Chosen Foods Chia Seeds that I’ve been graciously adding to smoothies, yogurt, oatmeal, and pretty much all breakfast foods. Chia seeds are a complete vegan source of protein, have 5 grams of fiber per serving, and deliver incredible energy. They are the perfect nutritional morning boost to get me through the day.

This Blueberry Lemon Coconut Smoothie is a refreshing way kick start your morning or get you through that mid-morning slump. Simply blend a cup of blueberries with a banana, shaved coconut, chia seeds, plain Greek yogurt, unsweetened almond milk, a squeeze of lemon juice, and some ice. Top with a few blueberries, a pinch of shaved coconut, and enjoy!

Ingredients
  1. 1 Cup Frozen Blueberries
  2. 1 Banana
  3. 1 Cup Unsweetened Vanilla Almond Milk
  4. 1/4 Cup of Plain Greek Yogurt
  5. 1 TBS Shaved Coconut
  6. 1 TSP Chia Seeds
  7. 1 Squeeze of Lemon Juice
  8. 2-3 Ice Cubes
  9. Fresh Blueberries (for the topping)
Instructions
  1. Add the ingredients to a blender and blend thoroughly.
  2. Top with some fresh blueberries and shaved coconut.
