I have an insatiable sushi craving (once I start, I can’t stop). Because sushi can be somewhat of an expensive indulgence, I decided to make a similar dish that can easily be put together in 30 minutes or less! I call it the “Salmon Sushi Salad” 🙂



  • Salmon Fillet
  • 1/4 Avocado
  • 1/2 Cup Brown Rice
  • 1/4 Cup Edamame
  • 1/4 Cup Cucumber
  • Green Onions (Garnish)
  • Seaweed (I used the Trader Joe’s packaged kind)
  • Gyoza or Miso Sauce (I like a lighter asian sauce to give flavor but not overpower the dish. Soy sauce would also be a good alternative)
  • Sesame Seeds (optional)
  • Siracha (optional)

Cooking Instructions

Fist, cook the salmon according to instructions on packaging. I baked mine in the oven for 20 minutes with some olive oil, lemon pepper, and sea salt. Next, I prepared the Trader Joe’s Brown Rice which cooks in just 3 minutes. Chop the cucumber, avocado, and green onion while the rice is cooking. Then, layer the cooked rice on the bottom of your dish. Top it off with your chopped cucumber, avocado, fully cooked salmon, edamame, seaweed crumbles, and green onion for garnish. Drizzle it with your gyoza or miso dipping sauce and enjoy! (Disclosure: I also added some siracha to mine to give it a kick…yum!)
